水出し(1l当り10-20gの茶葉を入れて冷蔵庫で6-24時間抽出)にしても美味しくいただけるお茶です。

Wok-roasted green tea

Gokase town in the northern part of Miyazaki prefecture (south of Kyushu island) presents a unique terroir surrounded by volcanic caldera of Aso to the North and deep Takachiho mountains to the South.

With all his tea gardens free of agrochemicals (and almost free of any fertilisers, including organics), Miyazaki-san manages to extract the most of this unique terroir while gently caring of the land he works.

This is a rare example of wok-roasted Japanese green tea (usually, steaming is used to deactivate enzymes in tea leaves and stop oxidation). Nutty flavour and lingering sweet aftertaste with light tannins are perfectly balanced in this cup. Enjoy it now or age for a couple of years – it has a potential for that.
